  • 4 large eggs
  • ¾ cup coconut sugar (or brown sugar)
  • Juice and zest from 1 orange (¼ cup juice and 1 tablespoon zest)
  • Juice and zest from 1 lemon (¼ cup juice and 1 tablespoon zest)
  • ½ cup butter (melted and cooled)
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 1 cup white whole wheat flour
  • BERRY SAUCE:
  • 1 cup fresh blueberries (if using frozen, do not thaw)
  • 1 cup fresh raspberries (if using frozen, do not thaw)
  • ½ cup water
  • cup coconut sugar (or brown sugar)
  • 1 tablespoon lemon juice
  • Powdered sugar for serving

Instructions

  • Preheat oven to 325°F (160°C). Line an 8×8 inch (20×20 cm) square baking pan with parchment paper, allowing an overhang on the sides for easy removal. Set aside.
  • Carefully separate the eggs. Place the egg whites in a medium-sized, clean bowl. Place the egg yolks in a separate large bowl. Using a handheld electric mixer, beat the egg whites on high speed until stiff peaks form, which should take approximately 3 minutes. Set the whipped egg whites aside.
  • In the large bowl with the egg yolks, whisk together the egg yolks, coconut sugar (or brown sugar), orange juice, lemon juice, both citrus zests, melted and cooled butter, milk, and vanilla extract until the mixture is smooth and well combined. Gradually whisk in the white whole wheat flour until just incorporated. Then, very gently fold in the whipped egg whites into the batter until it is just combined. Be careful not to deflate the egg whites; a few streaks of white are perfectly fine.
  • Pour and spread the batter evenly into the prepared baking pan. Bake the magic cake in the preheated oven at 325°F (160°C) for 35-40 minutes, or until the top is a light golden brown and feels just slightly firm to the touch. Once baked, remove the pan from the oven and cool the cake completely in the pan on a wire cooling rack. This cooling process is crucial for the layers to set properly.
  • Prepare the berry sauce: In a small saucepan, combine all the berry sauce ingredients: fresh blueberries, fresh raspberries (do not thaw if using frozen), water, coconut sugar (or brown sugar), and lemon juice. Once simmering, reduce the heat to medium-low and continue to simmer for about 10 minutes, stirring occasionally, until the sauce has reduced slightly and thickened to your desired consistency.
