This wasn’t just another semester; it was, without a doubt, the most challenging and intense academic period I’ve ever encountered. The curriculum was designed to push us to our limits, covering a broad spectrum of culinary disciplines essential for any aspiring chef. My schedule was packed, demanding constant focus and adaptability. From high-pressure short order cooking to the intricate details of gourmet meal preparation, every class built upon the foundational skills developed throughout my program. These courses were not just about cooking; they were about mastering the art and business of food.

The format was incredibly innovative and challenging: each student in the class rotated through the role of “executive chef” for a week.
During their week as executive chef, the student was solely responsible for designing an elaborate multi-course menu, overseeing its preparation, and leading the team during a public gourmet luncheon held at the end of the week. This wasn’t merely a cooking exercise; it was an immersive lesson in leadership, menu engineering, team management, and execution under immense pressure. It truly felt like running the line of a fancy restaurant, with real diners, real expectations, and real consequences for every dish.
Beyond the primary menu, each student also had the incredible opportunity to craft their own unique ice carving to adorn the dining room. This added an artistic flair and personal touch to the dining experience, showcasing our creativity beyond just the plate. The level of detail and effort invested by every student was extraordinary, transforming our classroom into a rotating pop-up fine dining establishment.

I designed the entire menu from scratch, painstakingly writing and testing each recipe to ensure perfection. The goal was to present a sophisticated yet approachable dining experience that showcased my culinary philosophy and skills. It was a daunting task, but the sense of accomplishment upon seeing my vision come to life was unparalleled.


My personal touch extended to the decor as well. For my ice carving, I decided on an elegant design featuring two full wine bottles encased within the ice. The overwhelming support from my entire family, who filled two tables, meant the world to me. Their presence, cheering me on during this crucial event, was an incredible source of motivation and pride. It truly transformed a high-pressure academic exercise into a cherished personal milestone.

My final semester wasn’t solely confined to the rigorous structure of my gourmet luncheon. While my hands were often literally elbow-deep in food, I was also actively engaged in various other culinary activities and enriching experiences that broadened my understanding of the food industry.


One particularly memorable moment involved a beurre blanc sauce I prepared. It was my very first attempt at this delicate, emulsified butter sauce, known for its challenging technique. To my delight, and much to my surprise, my chefs seemed incredibly impressed! The sauce was almost immediately whisked off my stove and proudly paraded around the kitchen, showcased to other students as an example of excellent execution. It was a small but significant validation of my progress and skill development, a moment that truly boosted my confidence in the demanding culinary environment.

Throughout the semester, I continued to refine various techniques, from precise knife work to complex plating, constantly striving for perfection in every dish. These daily kitchen challenges, whether mastering a new ingredient or perfecting a classic recipe, were invaluable learning opportunities.






Midwest Food Expo: A Glimpse into the Culinary World
Another highlight of the spring semester was attending the annual Midwest Food Expo in Milwaukee. This event is always an exhilarating dive into the latest trends, technologies, and innovations in the food service industry. It’s an unparalleled opportunity to network with industry professionals, discover new ingredients, sample cutting-edge products, and gain valuable insights into the broader culinary landscape. The energy of the expo, with its myriad of vendors and demonstrations, is always inspiring and helps to keep a finger on the pulse of what’s happening in the culinary world.


Speaking of Milwaukee, if you ever find yourself in the city, I highly recommend dining at The Sanford Restaurant. My experience there was truly one of the best dining experiences I’ve ever had. Their commitment to exquisite ingredients, innovative techniques, and impeccable service provided a masterclass in fine dining, offering immense inspiration and a benchmark for culinary excellence. It reinforced my passion for creating exceptional food experiences.

The Grand Finale: Exams and Graduation
The semester culminated in a series of final exams that truly put our acquired skills to the test. These weren’t your typical paper-and-pencil tests; they were intense, hands-on cooking challenges designed to simulate real-world kitchen scenarios.
One such exam was the Short Order Fish Fry final, a fast-paced environment where precision, speed, and consistency were paramount. This test required us to prepare multiple servings of a classic fish fry quickly and perfectly, mimicking the demands of a busy restaurant during peak hours.

Then came the Gourmet final, an even more elaborate and demanding challenge. For this particular exam, we were tasked with preparing gourmet dishes featuring less common ingredients, such as goose legs. This required advanced butchery skills, innovative cooking techniques, and sophisticated plating to transform these ingredients into a fine dining experience. It was a high-pressure demonstration of everything we had learned, pushing our culinary boundaries.

And finally, the moment we had all worked so incredibly hard for: graduation ceremony! Walking across that stage was an indescribable feeling of accomplishment and relief. It marked the official end of one chapter and the exciting beginning of another. And yes, I’m thrilled to report, I didn’t trip! It was a perfect culmination to an unforgettable journey.

Just a few weeks later, my wonderful partner also celebrated his graduation. It was truly special to share this significant milestone with him, marking a period of academic achievement for both of us.

The Next Chapter: From Culinary Arts to Business Acumen
Now that culinary school is officially behind me, many of you might be wondering: “What’s next?” Well, my journey of learning and growth is far from over. Early last fall, I made a pivotal decision to continue my education beyond my Associate’s degree in Culinary Arts. I recognized the immense value in combining my hands-on culinary skills with a strong understanding of business principles.

This fall, I will be embarking on a new adventure, moving an hour from home to attend UW Whitewater. There, I will be pursuing a Bachelor’s degree in Business. My aim is to equip myself with the strategic knowledge and entrepreneurial spirit necessary to navigate the complexities of the food industry, whether that means managing a restaurant, launching a food business, or innovating within the culinary sector. The synergy between culinary expertise and business acumen is undeniable, and I believe this combination will be incredibly valuable as I carve out my future path. I am committed to working diligently, step by step, to achieve these ambitious goals.
