Essential Ingredients You’ll Need:

To create these mouthwatering focaccia breadsticks, quality ingredients are key. Here’s a closer look at what you’ll gather:

  • Bread Flour: For the best structure and chew, bread flour is indispensable. I highly recommend using a kitchen scale to measure your flour accurately in grams – 650 grams (approximately 4-1/2 cups) will ensure the perfect dough consistency.
  • Instant Yeast: This recipe calls for instant dry yeast, which can be mixed directly with dry ingredients without proofing. For consistent, high-quality results, Red Star Platinum Yeast is my top recommendation.
  • Kosher Salt: More than just seasoning, salt is vital for flavor development and controlling the yeast activity in bread. Kosher salt provides a clean, pure taste.
  • Sugar or Honey: A touch of sweetness, whether from sugar or 1/2 tablespoon of honey, feeds the yeast and contributes to the beautiful golden-brown crust and a subtle depth of flavor.
  • High-Quality Olive Oil: Extra-virgin olive oil is a cornerstone of focaccia, lending rich flavor and a tender crumb. Don’t skimp here; a good quality oil makes a noticeable difference.
  • Cheeses: A blend of low-moisture shredded mozzarella for its supreme meltiness and grated Parmesan for a sharp, salty kick creates the ideal cheesy topping.
  • Pizza Seasonings: Garlic powder infuses the breadsticks with aromatic warmth, while a generous amount of fresh basil provides an essential bright, herbaceous finish.
  • Pizza Sauce: A warm, flavorful pizza sauce is the ultimate companion for dipping these cheesy breadsticks, completing the pizza experience.

The Art of Proofing: Patience is Your Secret Ingredient

The secret to truly exceptional focaccia lies in its proofing. This dough demands patience, requiring at least a 24-hour fermentation period. So, remember to plan ahead!

Why the extended proofing time? Focaccia dough derives its characteristic depth of flavor and unique texture from many hours of cold fermentation. This slow process allows the yeast to work its magic, breaking down starches and proteins, resulting in a more complex, nuanced taste and a wonderfully airy structure.

One of the best features of this recipe? No kneading required! Simply mix your dough, transfer it to a greased bowl, cover it, and let it rest in the refrigerator. This hands-off approach makes the process surprisingly simple.

Optimize for Flavor: This dough can be cold-fermented in the fridge for up to 72 hours. If your schedule allows, consider letting it rest for the full three days. The longer your dough ferments, the more pronounced and sophisticated its flavor will become, and its texture will be even more sublime.

Expert Tips for Shaping Your Dough

After its patient fermentation, your dough will emerge beautifully elastic and pleasantly sticky – precisely what you want for a perfect focaccia. This stickiness is a sign of a well-hydrated, flavorful dough.

To shape your dough, gently stretch and pat it into an 18×13-inch sheet pan. Once in the pan, allow it to undergo a second rise at room temperature for 45-60 minutes. This final rise contributes to the focaccia’s signature airy texture.

While the dough’s stickiness might seem challenging at first, patience is key. Lightly coat your hands with olive oil before handling the dough; this will prevent sticking and make the shaping process much smoother and more manageable. The goal is an even layer, allowing the breadsticks to bake uniformly.

Achieving Baking Perfection for Your Breadsticks

These breadsticks thrive in a hot oven. You’ll bake them at a high temperature of 450°F (230°C). Crucially, ensure your oven is fully preheated for at least 45 minutes before baking. A truly hot oven is essential for achieving the perfect crust and proper rise.

The focaccia typically takes 20-25 minutes to bake to a deep golden brown. Keep an eye on it; if you notice it browning too quickly, loosely tent a piece of aluminum foil over the top to prevent over-browning while allowing the interior to cook through.

Once your focaccia reaches that beautiful deep golden hue, remove it from the oven. Immediately sprinkle both mozzarella and Parmesan cheeses generously over the entire surface. Return the pan to the oven and broil for just a few minutes, under high heat, until the cheese is perfectly melted, bubbly, and lightly browned – watch it carefully to prevent burning!

For ultimate flexibility, you can bake the focaccia ahead of time, let it cool, and then add the cheese topping and broil just before you’re ready to serve. This allows for fresh, hot breadsticks with perfectly melted cheese whenever you desire.

As soon as these divine breadsticks emerge from the oven, sprinkle them generously with plenty of fresh basil leaves. The residual heat will gently wilt the basil, releasing its aromatic oils and adding an unparalleled herby brightness that truly can’t be beaten. This final touch adds both visual appeal and a burst of fresh flavor.

And, of course, ensure your warm pizza sauce is at the ready! It’s about to meet its match with this cheesy, fluffy goodness. The combination of the rich sauce, melted cheese, and tender focaccia creates a symphony of flavors that will have everyone reaching for more.

These breadsticks truly represent the best of all bread worlds. They deliver the familiar, comforting taste of pizza, amplified by the abundant cheese and savory sauce. Yet, the distinct fluffy, chewy texture of the focaccia dough elevates them to an entirely new level of deliciousness. They are a game-changer, whether you serve them as an appetizer, a side, or, as we often do, as the main event!

Just embrace the delicious destiny: these are destined to be dinner. They are simply too good to be confined to a mere starter.

Total Time: 2 days 35 minutes

Servings: 16 breadsticks
Calories: 160 kcal

Ingredients

  • 4-1/2 cups (650 grams) bread flour
  • 2 teaspoons salt
  • 1 teaspoon instant dry yeast
  • 2 tablespoons honey
  • 2 cups (16 oz) room-temperature water
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon garlic powder
  • 1-1/2 cups shredded low-moisture mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh whole or minced basil for topping
  • Warmed pizza sauce for serving

Instructions

  1. In a large bowl, combine flour, salt, and yeast. Drizzle in honey and water and stir dough with a wooden spoon until a slightly-sticky dough forms. Transfer dough to a separate large greased bowl.
  2. Cover bowl with plastic wrap and refrigerate at least 48 hours or up to 72 (while this long rise time is preferable for the best flavor, you can also get away with letting it rise 24 hours in the fridge if you need it made sooner – just be aware you’ll lose a little flavor!)
  3. When you are ready to bake, preheat oven to 450F. Grease an 18×13 sheet pan well with 1 tablespoon olive oil.
  4. With greased hands, punch risen dough and stretch and pull dough to pat into prepared sheet pan (dough will be slightly sticky, just be patient and keep stretching and pulling dough to fit into pan) Allow dough to rise at room temperature 45-60 minutes until slightly puffy.
  5. Drizzle top of focaccia with remaining olive oil and sprinkle with garlic powder. Use your fingers to make several indentions all over dough. Bake focaccia at 450F 20-25 minutes until a deep golden brown.
  6. Remove focaccia from oven and immediately top with cheeses. Broil under high heat 2-3 minutes until cheese is melted and lightly browned.
  7. Remove focaccia from oven and top with fresh basil. Let cool several minutes then slice into 16 breadsticks and serve hot with warmed pizza sauce. Enjoy!
