Hello, wonderful food enthusiasts! I’m absolutely thrilled to be a guest today on one of my favorite blogs, Sarah’s “Whole and Heavenly Oven.” This week is all about the heartwarming goodness of chili, and I, Christin from Spicy Southern Kitchen, am beyond excited to share my go-to three-bean chili recipe with you.
Thank you, Sarah, for having me and allowing me to contribute to your fantastic “Chili Week” celebration. Your blog is a constant source of inspiration, known for its approachable and delicious recipes, stunning photography, and your infectious energy. It’s truly impressive what you’ve achieved at such a young age, and I deeply admire your passion.

Why Chili is the Ultimate Comfort Food
As the crisp autumn air arrives and the leaves begin to change, my culinary thoughts invariably turn to one thing: a steaming pot of chili. It’s a quintessential fall dish, a warm embrace in a bowl that satisfies both body and soul. For many home cooks, myself included, chili holds a special place in the heart for countless reasons. It’s remarkably easy to prepare, incredibly delicious, and offers endless versatility, making it a staple in kitchens across the globe.
Beyond its comfort factor, chili is also a smart choice for a family meal, especially when packed with an abundance of beans. This not only makes it a relatively inexpensive dish to prepare, stretching your budget further, but also boosts its nutritional profile significantly. Beans are an excellent source of plant-based protein and fiber, providing a satisfying “punch” that keeps you full and energized without breaking the bank. It’s truly a win-win, offering maximum flavor and nutrition with minimal effort.
The Art of a Perfect Chili: Spice, Balance, and Texture

Today, I’m thrilled to unveil my recipe for a delightful Three-Bean Chili. This isn’t just any chili; it’s a carefully crafted blend of flavors designed to be both simple to make and incredibly satisfying. We infuse it with a vibrant kick from fresh jalapeño pepper and a subtle heat from cayenne pepper, ensuring every spoonful is an exciting experience. To perfectly balance the rich acidity of the tomatoes, we add a touch of brown sugar, which mellows the flavors and adds a hint of sweetness that rounds out the dish beautifully.
The “three-bean” aspect of this chili refers to a robust combination of kidney beans, black beans, and chickpeas. While chickpeas are often technically referred to as garbanzo beans, they integrate seamlessly into this recipe. Their firm texture provides a wonderful contrast to the softer kidney and black beans, adding an unexpected but delightful bite that elevates the overall experience. Feel free to experiment with other canned beans you might have on hand – navy beans, pinto beans, or cannellini beans would all make excellent additions, allowing you to truly customize this recipe to your pantry and preferences.
Elevating Your Chili Experience: The Magic of Toppings
If there’s one thing that can transform a good bowl of chili into an extraordinary one, it’s the toppings. They offer a fantastic opportunity to add layers of flavor, texture, and visual appeal, turning a simple meal into a vibrant culinary adventure. While I often keep things classically simple with dollops of cool sour cream, a generous sprinkle of shredded cheese, and a scattering of fresh green onions, the possibilities for customization are virtually endless.
Consider piling on some sliced black olives for a briny touch, creamy avocado cubes for richness, or extra pickled jalapeños for an added zing. A sprinkle of fresh cilantro provides a burst of herbaceous freshness that perfectly complements the savory chili base. For those looking for a healthier alternative to sour cream, a dollop of Greek yogurt offers the same cooling creaminess with an added protein boost. Don’t be afraid to get creative and tailor your toppings to your personal taste – that’s truly where the fun begins!

Achieving the Perfect Chili Consistency and Serving Suggestions
I personally adore my chili to be rich and thick, a truly hearty stew that clings to your spoon. However, if you prefer a thinner consistency, it’s incredibly easy to adjust. Simply add a little extra water, beef broth, or even tomato juice to reach your desired thickness. The beauty of chili lies in its adaptability, allowing you to make it exactly how you like it.
For a complete and utterly satisfying meal, I highly recommend serving this three-bean chili alongside a batch of warm, fluffy corn muffins. The slightly sweet, crumbly texture of the muffins is the perfect counterpoint to the savory, spicy chili, creating a classic pairing that’s guaranteed to be a crowd-pleaser. This combination offers a stick-to-your-ribs, comforting experience that’s ideal for a chilly evening or a casual gathering with loved ones.
Tips for the Best Three-Bean Chili Every Time
- **Batch Cooking & Freezing:** Chili is an excellent candidate for meal prepping. Make a large batch, let it cool completely, then portion it into airtight containers or freezer bags. It freezes beautifully for up to 3-4 months, making for quick and easy weeknight meals.
- **Slow Cooker Adaptation:** To adapt this recipe for a slow cooker, brown the ground beef and onion as directed in step 1. Then, combine all ingredients (except for the final addition of beans, salt, and pepper) in your slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours. Add the beans, salt, and pepper during the last 30 minutes of cooking.
- **Vegetarian Options:** For a vegetarian version, simply omit the ground beef and beef broth. Increase the amount of beans or add a plant-based ground “meat” substitute and use vegetable broth. The rich spices and array of beans ensure a flavorful and hearty vegetarian chili.
- **Spice Level Adjustment:** If you prefer less heat, reduce or omit the jalapeño and cayenne pepper. For more heat, leave the seeds in the jalapeño or add an extra pinch of cayenne.
- **Enhance Flavor:** A small amount of unsweetened cocoa powder or a square of dark chocolate can add a deep, complex richness to your chili, without making it taste like chocolate.

Ingredients
- 1 pound lean ground beef
- 1 medium onion, diced
- 1 jalapeño pepper, seeded and minced
- 2 tablespoons chili powder
- 2 teaspoons brown sugar
- 1⁄4 to 1⁄2 teaspoon cayenne pepper
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon garlic powder
- 1 (14 ounce) can fire-roasted diced tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (6 ounce) can tomato paste
- 1 1⁄2 cups water
- 1 cup beef broth
- 1 teaspoon apple cider vinegar
- 1 (15 ounce) can light red kidney beans, rinsed and drained
- 1 (15 ounce) can chickpeas, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- **Optional Toppings:** shredded cheese, sour cream (or Greek yogurt), green onion, black olives, avocado, pickled jalapeño, fresh cilantro
Instructions
- In a large Dutch oven or heavy-bottomed pot, cook the ground beef and diced onion over medium-high heat. Break up the meat into small chunks with a wooden spoon as it cooks. Continue until the beef is fully browned and the onion is softened. Drain any excess grease.
- Add the minced jalapeño, chili powder, brown sugar, cayenne pepper, ground cumin, and garlic powder to the pot. Cook for 1 minute, stirring constantly to ensure the spices are well-mixed and fragrant. This step helps to “toast” the spices, intensifying their flavor.
- Stir in the fire-roasted diced tomatoes, tomato sauce, tomato paste, water, beef broth, and apple cider vinegar. Bring the mixture to a gentle simmer. Reduce the heat to low, and let it simmer uncovered for 30 minutes, stirring occasionally to prevent sticking and ensure even cooking. If the chili becomes too thick during this time, add a little more water or beef broth to reach your desired consistency.
- Finally, add the rinsed and drained kidney beans, chickpeas, and black beans, along with salt and black pepper. Stir to combine and simmer for an additional 5 minutes, allowing the flavors to meld and the beans to heat through.
- Serve hot with your favorite toppings.
Yield: 4-6 servings
