Instructions

Peanut Butter Cookie Crust

  • Preheat oven to 350F (175C). Lightly grease a 9-inch tart pan with a removable bottom. Set aside.
  • In the bowl of a stand mixer or with a handheld electric mixer, beat softened butter and sugars together until the mixture is light and creamy, approximately 1-2 minutes. Incorporate the creamy peanut butter, large egg, and vanilla extract, beating until the mixture is smooth and well combined.
  • Gradually add the baking soda, salt, and white whole wheat flour to the wet mixture. Beat on low speed until a soft, cohesive dough forms.
