The Underrated Star of the Thanksgiving Plate

Now, for a truly pressing question that often sparks debate: how many of us secretly (or not-so-secretly) dedicate a significant portion of our Thanksgiving plate to dinner rolls? Is it just me, or do others find themselves prioritizing those fluffy, buttery morsels over almost everything else? While my family might pile high on turkey and stuffing, I’m over here, an unapologetic advocate for the dinner roll, stacking them like a pro. They may call it unconventional, but I call it a wise allocation of plate real estate. After all, a holiday meal isn’t complete without a generous supply of warm, comforting bread.

For me, it’s easily a 50/50 split: half dinner rolls, half everything else. There’s something uniquely magical about Thanksgiving dinner rolls that transcends any other time of year. Perhaps it’s the shared warmth, the festive atmosphere, or simply the unparalleled joy of tearing into a soft, savory piece of bread. Whatever the reason, this is the season for exceptional bread.

It would feel utterly wrong to let another Thanksgiving pass without introducing a new, irresistible dinner roll recipe. And yes, for those who loved last year’s sensation, these Parmesan Garlic Rosemary Knots are a glorious evolution of that beloved recipe that truly started it all. We’ve taken the classic foundation and amplified it with a cheesy, garlicky, and herbaceous punch, creating what can only be described as a scientifically proven method for winning at holiday carbs.

Total Time: 1 hour 50 minutes
Servings: 1 dozen rolls
Calories: 246 kcal

Ingredients

  • 2-1/4 teaspoons active dry yeast (1 1/4-oz pkg)
  • 1-1/4 cups warm water (110F)
  • 1/3 cup vegetable oil
  • 1/4 cup honey
  • 1 large egg
  • 1-1/2 teaspoons salt
  • 2 tablespoons minced fresh rosemary
  • 3-1/2 to 4 cups white whole wheat flour
  • TOPPING:
  • 4 cloves minced garlic
  • 3 tablespoons butter
  • 1 tablespoon minced fresh rosemary
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In the bowl of a large stand mixer, fitted with a dough hook attachment, dissolve yeast in warm water. Let stand 5 minutes until foamy. Mix in oil, honey, egg, salt, and rosemary until combined. With mixer on medium speed, add 3-1/2 cups flour and mix until dough pulls away from sides of bowl. (If dough seems too sticky, add additional flour, 1 tablespoon at a time until dough comes together.)
  2. Turn dough onto a floured surface and gently knead until smooth and elastic. Place in a greased bowl, turning once to grease top. Cover bowl with plastic wrap and let rise 1 hour or until doubled in size.
  3. Punch risen dough down and divide into 12 portions. Roll each portion into a 10 to 12-in long rope and tie each rope into a knot, tucking the ends underneath. Place knots on a parchment paper-lined baking sheet and allow to rise 30 minutes or until doubled in size.
  4. While rolls are rising, prepare the topping: In a small saucepan over medium-high heat, sauté garlic in butter until garlic is just fragrant. Remove from heat and gently brush over doubled-in-size rolls. Sprinkle rosemary and Parmesan cheese over tops of each roll.
  5. Bake knots at 375F for 15-20 minutes or until rolls are golden brown. Cool rolls slightly on a wire cooling rack and serve warm with butter.

Notes

Store rolls in an airtight container at room temperature for up to 3 days.
NOTE: Rolls may be made ahead of time—after rolls are formed in step 3, you may cover rolls with plastic wrap and chill overnight. Proceed with the recipe the next day as directed.
