Instructions
Lime Curd
- Set up a double boiler: bring a few inches of water to a simmer. In the top bowl, whisk egg yolks, sugar, lime juice, and zest. Place over simmering water.
- Whisk continuously to prevent curdling until the mixture is smooth and slightly thickened, about 8–10 minutes. Remove from heat and whisk in butter, 1 tablespoon at a time, until incorporated.

Graham Cracker Crumble
