Ingredients You’ll Need

  • Unsalted Butter: Used to caramelize the onions and add richness to the dip.
  • Sweet Onions: The star of the show! Vidalia onions are recommended for their sweetness.
  • Garlic: Adds a pungent and aromatic flavor to complement the onions.
  • Fresh Thyme: Infuses the dip with a subtle herbaceous note.
  • Cream Cheese: Provides a creamy and tangy base for the dip.
  • Sour Cream: Adds moisture and a bit of tanginess, balancing the richness of the cheese.
  • Worcestershire Sauce: Enhances the savory flavors with its umami depth.
  • Chickpeas: Adds heartiness, texture, and a nutty flavor to the dip.
  • Gruyere Cheese: Melts beautifully and imparts a nutty, slightly salty flavor.
  • Parmesan Cheese: Adds a sharp, salty, and nutty flavor to the topping.
  • Fresh Chives: For garnish, adding a fresh, oniony flavor and a pop of color.
  • Crostini: Crispy slices of bread for dipping into the warm, cheesy goodness. Alternatively, use pita bread, tortilla chips, or baguette slices.

Tips for Caramelizing Onions

For this recipe, you’ll need one large sweet Vidalia onion, thinly sliced. The key to perfect caramelized onions is patience and low heat.

Cook the onions over medium-low heat for about 30-35 minutes, stirring occasionally. They should gradually soften and turn a deep golden brown color, releasing their natural sweetness. Avoid rushing the process, as high heat can burn the onions instead of caramelizing them properly. A little water can be added, a tablespoon at a time, to deglaze the pan if the onions are sticking. This will add to the cooking time, but keeps the onions from burning.

Caramelized onions store well in the refrigerator for up to a week, so you can easily make them ahead of time and use them in various recipes. They are excellent in sandwiches, pizzas, and quiches.

Tips for the Perfect Chickpea Dip

  1. Drain and rinse the chickpeas thoroughly: This helps to remove excess liquid and prevents the dip from becoming watery.
  2. Lightly mash some of the chickpeas: Mashing some of the chickpeas helps to create a creamier texture and evenly distribute them throughout the dip. You don’t want a completely smooth dip; leaving some chickpeas whole adds a nice textural element.
  3. Soften the cream cheese: This ensures that the cream cheese blends smoothly and easily with the other ingredients, creating a cohesive and creamy dip.

Recipe Variations

Want to add your own twist to this dip? Try these variations:

  • Use a different bean: White beans, such as cannellini beans or Great Northern beans, can be used in place of chickpeas for a slightly different flavor and texture.
  • Experiment with different cheeses: Cheddar, mozzarella, provolone, or Swiss cheese can be substituted for Gruyere or Parmesan, each offering a unique flavor profile.
  • Add meat: For a heartier dip, fold in browned sausage, cooked bacon bits, or shredded chicken.
  • Spice it up: Add a pinch of red pepper flakes or a dash of hot sauce for a touch of heat.
  • Add fresh herbs: In addition to thyme, try adding rosemary, oregano, or parsley for a more complex flavor.

Make-Ahead Instructions

Planning ahead? Follow these time-saving tips:

  • Caramelize the onions: Caramelized onions can be stored in the refrigerator for up to 5-6 days. Store them in an airtight container.
  • Assemble the dip: Assemble the entire dip in the pan, cover it tightly with plastic wrap, and store it in the refrigerator for up to 3-4 days. Before baking, allow the dip to come to room temperature for about 30 minutes to ensure even heating.

  • 1 cup shredded gruyere cheese
  • ½ cup grated Parmesan cheese
  • Fresh chives for topping
  • Crostini for dipping

Instructions

  1. Melt butter in a large skillet over medium-low heat. Add onions and stir occasionally until onions are a deep caramelized color, about 30-35 minutes. Add garlic and thyme and cook 1 minute until fragrant. Place caramelized onions in a bowl and set aside.
