  • 2 tablespoons olive oil
  • 1 medium onion thinly sliced
  • 4 cloves garlic minced
  • 1 lb fresh asparagus ends trimmed and spears cut in half
  • 2 cups fresh mushrooms sliced
  • 8 chicken or turkey sausages sliced 1/4-in thick
  • 2 tablespoons balsamic vinegar

Instructions

  • In a large nonstick skillet over medium heat, heat olive oil until it shimmers. Add the thinly sliced onion, minced garlic, trimmed and halved asparagus, and sliced mushrooms. Sauté, stirring occasionally, until the vegetables are just barely tender and slightly caramelized, which usually takes about 10 minutes. Next, add the sliced chicken or turkey sausage to the skillet and continue to sauté until it is thoroughly heated through and lightly browned, approximately 5 minutes.
  • Carefully pour the balsamic vinegar into the hot pan to deglaze it. Make sure to scrape up any delicious browned bits from the bottom of the skillet – these bits are packed with flavor and will enrich your sauce. Stir everything together until the balsamic vinegar reduces slightly and coats the ingredients. Season the skillet generously with salt and freshly ground black pepper to taste, adjusting as needed.
