Peaches are at their peak right now, and this recipe makes the most of their sweet, aromatic flavor. The glaze is bright and saucy but reduces to a thick, spreadable jam that clings to the chicken and caramelizes beautifully over heat.

A blend of fresh peach puree and honey forms the core of the glaze, while a touch of brown sugar, apple cider vinegar, Dijon mustard, garlic, and rosemary balances sweetness with savory and tangy notes. Simmered briefly, the glaze develops a sticky, glossy finish that transforms simple grilled chicken into something special.

Making the Chicken

(Full recipe is below in the recipe card)

Ingredients You Will Need

  • Fresh peaches (ripe, peeled and pitted)
  • Honey
  • Packed light brown sugar
  • Apple cider vinegar
  • Dijon mustard
  • Garlic (crushed)
  • Fresh rosemary (sprigs)
  • Kosher salt and pepper
  • Boneless skinless chicken thighs or breasts

Choosing Your Chicken

Boneless, skinless chicken thighs are my top choice for this dish. They cook quickly, stay moist, and develop a nice char without drying out. If you prefer chicken breasts, use boneless, skinless breasts but watch cooking time closely — thicker breasts may need extra time or finishing in the oven. Always check that the internal temperature reaches 165°F (74°C).

Tips for Perfect Glazed Chicken

  1. Puree ripe peaches: choose peaches that yield easily under pressure for a sweet, smooth puree.
  2. Use fresh aromatics: fresh garlic and rosemary give the glaze depth and a fragrant finish.
  3. Reduce until sticky: simmer the glaze 10–15 minutes so it thickens to a jam-like consistency that will cling to the chicken.
  4. Brush while cooking: paint the chicken with glaze during grilling to encourage caramelization and build flavor.
  5. Reserve some glaze: keep half aside to brush on after cooking for a glossy, sticky finish and extra flavor.

Recipe Variations

Ideas to vary the flavor or take the recipe in a new direction.

  • Swap the fruit: plums, nectarines, apricots, or pineapple can be used instead of peaches.
  • Add heat: stir in a pinch of red pepper flakes, a dash of hot sauce, or a little finely chopped jalapeño for a spicy-sweet glaze.

Stovetop and Oven Instructions

If you’re cooking indoors, follow these stovetop or oven methods.

  • Stovetop: Heat 1 tablespoon vegetable oil in a large skillet or brush a cast-iron grill pan with oil. When hot, add the chicken and sear on both sides, brushing frequently with the glaze. Cook until the internal temperature reaches 165°F. For thick breasts, sear both sides and finish in a 400°F oven for 5–10 minutes.
  • Oven: Arrange chicken in a single layer on a greased sheet pan and coat with half the glaze. Bake at 400°F for 20–25 minutes or until the chicken reaches 165°F. Optionally broil 1 inch from heat for 2–3 minutes to crisp the exterior, then brush with the reserved glaze.

This recipe yields plenty of glaze — enough to baste the chicken while cooking and to spoon over rice or roasted vegetables for a complete meal. Leftover glaze keeps well refrigerated and can be gently warmed before serving.

In short: use those ripe peaches and make this easy, impressive chicken for a summer dinner everyone will love.

Ingredients

  • 1 medium ripe peach, peeled, pitted and diced
  • 1/2 cup honey
  • 2 tablespoons packed light brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 medium cloves garlic, crushed
  • 1–2 sprigs fresh rosemary
  • Kosher salt and pepper to taste
  • 2 lbs boneless, skinless chicken thighs or breasts

Instructions

  1. Place the diced peach in a food processor or blender and blend on high until smooth to make a puree.
  2. In a medium saucepan combine the peach puree, honey, brown sugar, apple cider vinegar, Dijon mustard, crushed garlic, and rosemary sprigs. Season with salt and pepper to taste.
  3. Bring the mixture to a simmer over medium-high heat. Reduce the heat to low and let it simmer for 10–15 minutes, stirring occasionally, until the glaze has reduced and thickened to a sticky, jam-like consistency. Remove and discard the rosemary sprigs. Reserve half the glaze for serving.
  4. Preheat a grill to 400°F (or heat a large skillet over medium-high heat and oil it well if cooking indoors). Season the chicken all over with salt and pepper.
  5. Place the chicken on the preheated grill or in the hot pan in a single layer. Cook for about 8–10 minutes at 400°F, brushing frequently with the glaze and turning as needed, until the internal temperature reaches 165°F.
  6. Remove the chicken from heat and serve warm, brushing the reserved glaze on top. Enjoy.
