(Full recipe and details below)

Ingredients You Will Need

  • 2% or skim milk
  • Active dry yeast
  • Granulated sugar
  • Eggs
  • Kosher salt
  • All-purpose flour
  • Unsalted butter
  • Rhubarb
  • Strawberries
  • Strawberry jam
  • Cornstarch
  • Lemon juice
  • Powdered sugar
  • Vanilla extract

Stand Mixer vs. Hand Mixing

You can mix and knead this dough in a stand mixer with a dough hook or by hand. A stand mixer saves effort and kneads quickly; hand mixing works fine but requires more time.

Stand Mixer: Use the dough hook and knead on medium speed for 5–7 minutes until the dough is stretchy and elastic.

By Hand: Mix in a large bowl with a wooden spoon. Turn the dough out onto a floured surface and knead about 10 minutes until elastic and smooth.

Tips for Perfect Sweet Rolls

  1. Heat milk to 110°F: Keep liquids at or below 110°F so the yeast stays active; hotter liquids will kill the yeast.
  2. Measure flour correctly: Use the spoon-and-level method to avoid packing too much flour into the cup.
  3. Knead to develop gluten: Proper kneading creates structure and the soft, airy crumb of the rolls.
  4. Allow dough to double in size: Grease the bowl, turn dough to coat, cover, and let rise 1–1½ hours until doubled.
  5. Warm rising environment: Aim for about 75–80°F for best rising results.
  6. Roll dough to size: Roll to a 12×16 inch rectangle for the right dough-to-filling ratio.
  7. Roll tightly: A snug roll creates a neat spiral and even layers of filling.
  8. Cut into 12 pieces: This will be a little messy with fruit—if filling falls out, tuck it back into the rolls once arranged in the pan.
  9. Second rise: After shaping, let rolls rise 30–45 minutes until slightly puffy.
  10. Under-bake slightly: Removing rolls a touch early keeps them soft and gooey inside.
  11. Cool before glazing: Let rolls cool about 20 minutes so the glaze sets without melting away.

Recipe Variations

Ideas to change up the flavors.

  • Use another berry: Substitute blackberries or blueberries for the strawberries.
  • Different glaze: A cream cheese glaze would pair beautifully with these rolls.

Overnight Option

You can prepare the dough and shape the rolls the night before. After cutting and arranging the rolls in the pan, cover with plastic wrap and chill in the refrigerator for up to 16 hours. The next morning, remove the pan 1½ hours before baking so the rolls come to room temperature and finish their rise.

Ingredients

Sweet Rolls

  • 1 cup (250g) warm milk (110°F)
  • 2-1/4 teaspoons active dry yeast
  • 1/3 cup (80g) granulated sugar
  • 3 large eggs, lightly beaten
  • 1-1/2 teaspoons kosher salt
  • 4-1/2 cups (600g) all-purpose flour (spooned and leveled)
  • 2 tablespoons (30g) unsalted butter, softened

Rhubarb Strawberry Filling

  • 1-1/2 cups fresh or frozen rhubarb, diced into 1/4-inch cubes
  • 1-1/2 cups fresh or frozen strawberries, diced into 1/4-inch cubes
  • 1/4 cup strawberry jam
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Vanilla Glaze

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons 2% or skim milk

Instructions

Sweet Rolls

  • Place warm milk in the bowl of a stand mixer fitted with a dough hook or in a large bowl. Dissolve yeast in milk and let stand 5 minutes until foamy.
  • Mix sugar, eggs, and salt into the yeast mixture until smooth. Add 4 cups flour and mix on low speed (or stir by hand) until the dough pulls away from the sides of the bowl. If it seems wet, add additional flour by the tablespoon until it pulls away.
  • Add softened butter by the tablespoon while the mixer runs, or fold in by hand until combined.
  • Knead the dough in the stand mixer 5–7 minutes on low until elastic, or knead by hand about 10 minutes on a floured surface.
  • Place dough in a greased bowl, turning once to grease the top. Cover and let rise in a warm place 1 to 1½ hours until doubled.

Rhubarb Strawberry Filling

  • Lightly grease a 9×13-inch baking dish. In a medium bowl, toss all filling ingredients until combined and set aside briefly.
  • Punch down the risen dough and turn it onto a floured surface. Roll into a 12×16-inch rectangle and spread the fruit filling, leaving 1/2-inch clear along the edges.
  • Tightly roll the dough and pinch the ends to seal. Cut into 12 even pieces and place them in the prepared dish. If fruit squeezes out, tuck it back into the rolls. Cover and let rise 30–45 minutes until puffy.
  • Preheat the oven to 350°F. Bake rolls 25–30 minutes until light golden; they should be slightly underbaked for a soft, gooey center. Cool on a wire rack 20 minutes before icing.

Vanilla Glaze

  • Whisk powdered sugar, vanilla, and just enough milk to reach a drizzling consistency. Spoon over slightly cooled rolls and let the glaze set for 10 minutes before serving.

Notes
