I am thrilled to share with you this cherished Danish breakfast and snack tradition: Ebelskivers! Essentially, they are small, fried buttermilk pancake balls cooked in a special pan and served with your choice of sugar or syrup. But this recipe is much more than just that; it holds a special place in my heart.
My introduction to Ebelskivers came through my husband, Jason’s family. This recipe originates directly from his grandparents’ recipe box. Grandpa Art, with his Danish heritage, passed down this recipe that Grandma Shirley has lovingly prepared for countless years.

One of the Mumm family’s cherished traditions involves making a large Ebelskiver breakfast whenever the family gathers at their cabin. Jason and I were fortunate enough to receive a personal cooking lesson on Ebelskivers from Grandma Shirley this past summer (along with our very own pan from my father-in-law!). To successfully cook Ebelskivers, you absolutely need a specific cast iron Ebelskiver pan. This recipe is designed for this pan, and it simply won’t work without it. The pan’s unique spherical molds are what give Ebelskivers their distinctive shape.
Our own Ebelskiver pan was a lucky secondhand find, and I’ve heard from many others who have discovered original Ebelskiver pans in excellent condition at antique stores, thrift stores, garage sales, and auctions. Keep your eyes peeled – you might just find a treasure!
If you prefer to purchase a new Ebelskiver pan, I’ve found close duplicates available at Williams Sonoma and Nordic Ware. Remember to always season your cast iron pan before its first use to ensure optimal performance and prevent sticking.

- Use Real Buttermilk: You simply can’t replicate the rich and tangy flavor that real buttermilk imparts to these pancakes. It’s worth the extra trip to the store!
- Cool Melted Butter: Allow the melted butter to cool slightly before adding it to the other ingredients. This prevents the eggs from accidentally scrambling and ensures a smooth batter.
- Gently Fold the Batter: Use a gentle hand when folding the dry ingredients into the wet ingredients. Overmixing can develop the gluten in the flour, resulting in tough Ebelskivers.
- Preheat the Pan Thoroughly: Make sure your Ebelskiver pan is properly preheated before adding the butter. We recommend starting the pan over medium heat to slowly and evenly heat the cast iron. A hot pan is crucial for achieving that crispy exterior.
- Use Plenty of Vegetable Oil: Don’t be stingy with the vegetable oil! You need enough to evenly coat the spheres in the pan. This prevents sticking and allows the Ebelskivers to release easily during cooking.

Grandma Shirley’s Famous Ebelskivers Recipe
A traditional Danish pancake recipe with crispy outsides and fluffy insides.
Ingredients:
- 2 large eggs
- 2 cups buttermilk
- 1/4 cup unsalted butter, melted and cooled
- 2 cups all-purpose flour (spooned and leveled)
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Vegetable oil for cooking
- Powdered sugar, cinnamon sugar, jam, or maple syrup for serving
Instructions:
- In a large bowl, whisk eggs well, then mix in buttermilk and melted butter until smooth.
- In a separate medium bowl, combine flour, sugar, baking powder, and baking soda. Fold flour mixture into buttermilk mixture until the batter is just combined.
- Preheat an ebelskiver pan over medium heat and grease each well very well with vegetable oil. Don’t go light on the vegetable oil for this part; you want a good couple of teaspoons of oil per well. This will make flipping the ebelskivers during cooking much easier.
- Once the pan is hot, begin ladling batter into wells, filling each just below the brim. Once all the wells are full, use an ebelskiver nut hook or toothpick to begin carefully rotating balls so they cook on all sides. Keep flipping balls occasionally for 5-8 minutes until a deep golden-brown color is achieved, and a toothpick inserted in the center of the balls comes out clean.
- Repeat the cooking process with remaining batter, greasing each well with vegetable oil in between batches (adjust heat as needed throughout the cooking process to keep pan hot but not so hot that it gets to the point of excessive smoking). If you have more than one ebelskiver pan and have a partner to help, feel free to get another pan going as well for faster cooking.
- Serve ebelskivers hot with your choice of sweetener. We particularly love these dipped in maple syrup or jam or with a sprinkle of powdered sugar or cinnamon sugar on top. Enjoy!
