  • 1⁄4 cup chopped red bell pepper
  • 1⁄4 cup chopped green bell pepper
  • 1 shredded carrot
  • 1⁄2 onion, chopped
  • 2 cloves garlic, minced
  • 1⁄2 small chili pepper, finely chopped (optional, for extra heat)
  • 2 teaspoons chili powder
  • 1⁄4 teaspoon cayenne pepper
  • 1 1⁄2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1⁄2 cup corn kernels
  • Toppings (Optional)
  • chopped avocado chunks
  • chopped green onions
  • shredded carrot
  • Vegan Cashew Sour Cream
  • 1⁄2 cup soaked cashews (cashews soaked in water overnight, or for at least 4 hours)
  • 3-4 tablespoons water
  • splash of apple cider vinegar
  • 1⁄2 teaspoon fine sea salt
  • 1 teaspoon lime juice

Instructions

  • To begin your delicious vegan chili, combine the vegetable broth, uncooked quinoa, black beans, and diced tomatoes directly into your slow cooker. Give it a good stir to ensure all ingredients are evenly distributed. This forms the foundational liquid and bulk of your chili.
  • Next, incorporate the chopped red and green bell peppers, shredded carrot, diced onion, and minced garlic into the slow cooker. Stir again to mix these vibrant vegetables throughout the chili base. Finally, add the remaining seasonings: chili powder, cayenne pepper, salt, ground black pepper, ground cumin, and oregano. Stir several times to thoroughly combine all the aromatic spices with the other ingredients, ensuring every bite will be packed with flavor.

  • For the Vegan Cashew Sour Cream:
  • Place all the ingredients for the cashew sour cream (soaked cashews, water, apple cider vinegar, fine sea salt, and lime juice) into a high-speed blender (such as a NutriBullet). Blend until the mixture is completely smooth and creamy, which usually takes about 30 seconds. You may need to stop halfway through to scrape down the sides of the blender to ensure everything is fully incorporated. Add more water, a tablespoon at a time, if a thinner consistency is desired.
  • Serve your warm, flavorful chili generously topped with a dollop of the creamy vegan cashew sour cream, and your favorite garnishes.
