One-Pan Broccoli Chicken Mac ‘n’ Cheese: Your New 30-Minute Weeknight Hero

If your weeknights are anything like mine, the quest for a delicious, quick, and easy dinner often feels like an Olympic sport. Especially when it comes to chicken! I’ll admit, my household has a slight obsession with chicken dinners, often finding new and exciting ways to feature this versatile protein. But let’s be real, even the most devoted chicken lovers need variety and, more importantly, *speed* when hunger strikes.

While I might occasionally swap out chicken for a slice of cake or a stack of pancakes (sometimes even both simultaneously, because balance!), the reality is that hearty, satisfying meals are what truly fuel us through the week. And today, I’m thrilled to share a recipe that perfectly embodies that balance: a phenomenal one-pan broccoli chicken mac ‘n’ cheese that will revolutionize your dinner plans.

Embracing the Culinary Journey: A Chef’s Hat and a New Knife Kit

On a slightly different but equally exciting note, I had a momentous day yesterday! It was my first time in full culinary uniform: crisp black pants, professional black shoes, a pristine white chef’s coat, and yes, even a puffy chef’s hat. I might have looked a tad comical, with everything being a couple of sizes too big, but the feeling of stepping into that professional attire was incredibly empowering. I felt like a true culinary pro, and that’s what truly counts!

Adding to the excitement, my brand-new, admittedly expensive but absolutely stunning, knife kit arrived. What a thrill! I immediately put the chef’s knife to work. Just the day before, we had spent hours in the kitchen mastering various knife cuts, and it became clear I needed significant practice. Who knew there were so many intricate ways to cut a simple carrot? Every slice and dice brings me closer to culinary mastery, and I’m loving every step of the learning process.

Ingredients

  • 1/4 cup butter
  • 1-1/2 lbs chicken breasts, diced into 1/2-inch cubes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups fresh broccoli florets
  • 1/4 cup white whole wheat flour
  • 2 cups milk
  • 1/2 cup heavy whipping cream
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons minced fresh parsley
  • Salt and pepper to taste
  • 1 lb rotini or spiral pasta, cooked according to package instructions

Instructions

  1. Melt butter in a large skillet over medium-high heat. Once butter is hot, add chicken, onion, garlic, and broccoli to the pan. Stir occasionally until vegetables begin to soften and chicken is no longer pink, about 7-10 minutes.
  2. Reduce heat to medium and stir flour into the cooked chicken mixture. Slowly add milk and cream, whisking constantly until the mixture is smooth. Stir sauce occasionally over medium heat until just simmering and beginning to thicken. Remove from heat and stir in cheese until melted. Add parsley and season sauce with salt and pepper to taste.
  3. Stir cooked pasta into the sauce until evenly coated and return to medium heat. Stir macaroni occasionally until heated through. Remove from heat and serve hot.
