- 1 lb apples (about 3 medium), peeled, cored, and diced into 1/4-inch cubes
- 3 tablespoons (45g) packed light brown sugar
- 1 tablespoon maple syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- Crushed cinnamon crunch cereal for topping
- 1/4 cup jarred or homemade caramel sauce
Instructions
Cookie Dough
- Place butter and both sugars in a large bowl or the bowl of a stand mixer fitted with a paddle attachment. Mix on medium speed or by hand until creamy, about 2 minutes. Add the egg and vanilla, beating until smooth.
- In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Add to the butter mixture and fold until just combined. Wrap the dough in plastic and chill for 2 hours.
Apple Pie Filling & Baking

- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Remove dough from the refrigerator and scoop into 2-inch balls. Place the dough balls about 2 inches apart on the prepared sheets. Use your thumb or the back of a greased tablespoon to make an indentation in each ball, being careful not to press through the bottom.
- Spoon about 1 tablespoon of the apple filling into each indentation. Bake at 350°F for 10–12 minutes, until the cookie edges are lightly golden.
