My Culinary School Journey: Four Months of Delicious Discoveries and Chef Training
Embarking on a new adventure, I’m thrilled to share the incredible journey of my first four months in culinary school!

After weeks of eager anticipation, the moment has finally arrived! I’m beyond excited to pull back the curtain and share every savory detail from my initial semester at culinary school. For the past four months, my world has revolved around spatulas, simmering pots, and an unwavering passion for food, commanding 110% of my energy. So, grab your favorite beverage, get comfortable, and prepare for a deep dive into the fascinating, challenging, and utterly rewarding experience of professional chef training.
Let’s rewind to the very beginning, to understand what truly sparked this culinary pursuit. As many of you already know, my love affair with food is profound. The kitchen isn’t just a room in my house; it’s my sanctuary, a place where creativity flourishes and comfort abounds. Over the past few years, cooking has transitioned from a hobby to an essential part of my daily existence, shaping my identity in ways I never anticipated.

The Unexpected Path: From Aspiring Dancer to Culinary Student
Believe it or not, dedicating my life to culinary arts was not a lifelong ambition. In fact, at the age of thirteen, my sights were firmly set on a performing arts career. I dreamt of becoming a professional dancer, meticulously training every single day to achieve that goal. My world revolved around dance studios, rehearsals, and the pursuit of artistic expression through movement.
However, fate, as it often does, had other plans. At sixteen, a series of seemingly random events began nudging me towards the culinary world. With both my parents working, I naturally took on the responsibility of preparing family meals, and to my surprise, I found immense joy in it. This period also coincided with an unfortunate ankle injury that sidelined me from dancing for nearly three months. This unexpected downtime proved to be a pivotal moment. It was during this very hiatus that the “Whole and Heavenly Oven” blog was born, a testament to my burgeoning interest in food and sharing recipes.
Being forced to step away from dance gave me ample time for introspection and to seriously reconsider my life’s direction. While my love for dance remained, I couldn’t ignore the harsh realities of a professional dance career – the incredible physical and mental toll it demands. I realized I sought a path that would bring me happiness and fulfillment without the intense, often brutal, stresses of a performance career. Cooking, by then, had emerged as the only other hobby that had captured my heart with the same intensity as dance.

Choosing My Culinary Home: Blackhawk Technical College
My decision made, the next step was finding the right culinary program. I extensively researched various cooking schools in the southern Wisconsin area, ultimately visiting two institutions. The culinary program at Blackhawk Technical College quickly stood out. Its reputation, comprehensive curriculum, and convenient location – just a 30-minute drive from my hometown – made it the perfect fit. I submitted my application last February and, to my delight, received an acceptance letter less than a month later. The journey was officially set to begin!
Diving Into My First Semester: Expectations, Realities, and Delicious Surprises
Now that you’re caught up on my pre-culinary school saga, let’s talk about the heart of the matter: my first semester at BTC. The most common questions I’ve been asked are: “Do you love it so far?” “Is it everything you expected?” and “Is it a lot of hard work?” My answers are a resounding “Yes,” “Kinda,” and an emphatic “Yes!”
I absolutely adored my first semester. It largely aligned with my expectations, though it certainly presented its share of delightful surprises and challenges. And yes, it was undeniably a lot of work. Juggling a full-time culinary program, keeping up with demanding homework assignments, and simultaneously managing my blogging commitments required meticulous time management and unwavering dedication. Fortunately, I thrive on a busy schedule, finding energy in the constant motion and learning.
Being a culinary student means truly immersing yourself in the kitchen environment. You might be curious about my ‘chef-in-training’ appearance. Let’s just say, safety and practicality often take precedence over glamour! Here’s a glimpse of me in my element:

Beyond the pristine chef’s whites, the reality of a busy kitchen often involves a few minor battle scars. Yes, I did acquire a few cuts and burns, including a particularly memorable nasty cut while diligently slicing carrots for a soup. But these are rites of passage in any kitchen, and frankly, I’m no stranger to minor injuries in my own home kitchen anyway!
Another common concern I heard from other culinary students was the dreaded “culinary school weight gain.” Many horror stories circulated about students packing on pounds due to constant tasting and rich food. I desperately hoped to avoid this fate, and happily, so far so good! In fact, the intense physical demands of being on my feet for hours each day, constantly moving and working in the kitchen, had the opposite effect – I actually lost two pounds! It seems the rigorous culinary environment is quite the workout.
A Gastronomic Adventure: Culinary Creations & Learning Experiences
Alright, let’s get to the main event – the food! Oh, the food! This past semester was a mind-blowing parade of incredible dishes. I took countless pictures, perhaps even overloading your Instagram feed (my apologies!), and tasted pretty much everything we prepared. While the kitchen lighting wasn’t always ideal for photography, the flavors more than compensated. Please overlook any less-than-perfect images; the culinary magic was truly in the taste.
From Stuffed Oysters to Homemade Gnocchi: A Taste of My Dishes
Here are just a few (okay, maybe more than a few!) highlights from my delicious learning experience:

(Expertly prepared stuffed oysters and perfectly seared teriyaki salmon – a fantastic start to mastering seafood.)

(Our rich and comforting cream of sweet potato soup – a recipe I loved so much, I shared it here!)

(Grain day was a feast of textures and flavors: homemade polenta, fluffy rice pilaf, classic mashed potatoes, and creamy risotto. Each dish taught us fundamental cooking principles.)

Warning: Preparing homemade mayonnaise entirely by hand is an arm workout like no other! The exhaustion is real, but the creamy, fresh result is undeniably worth it.

(Hearty beef soup served with delicate homemade pasta – a true lesson in comfort food from scratch.)

(An elaborate appetizer party showcasing our growing skills in creating elegant finger foods!)

I swear, mastering homemade gnocchi felt like an epic battle of wills. It truly will be the death of me, but the triumph of achieving that perfect pillowy texture is unparalleled.

(A refreshing seafood salad paired with crispy, homemade potato chips – a lesson in balancing flavors and textures.)

This chocolate bread pudding, especially when served with its decadent bourbon sauce, was an absolutely irresistible creation – pure indulgence!

(Mastering the art of classic French onion soup, complete with perfectly caramelized onions and a rich, savory broth.)

(A perfectly grilled flank steak, complemented by tender roasted Brussels sprouts and elegant duchess potatoes – a complete plated meal.)

(Exquisite lamb chops adorned with a vibrant mint pesto, served alongside creamy butternut squash risotto and sweet apricot maple green beans.)

(Flavorful roasted red pepper and goat cheese bruschetta – a simple yet sophisticated appetizer.)
Competition & Collaboration: Pizza Wars, Soup Wars, and Supper Club

One of the most exciting experiences was participating in our class’s “Pizza Wars” contest. And guess what? My unique sundried tomato pesto, kale, and goat cheese pizza took home the win! It was incredibly rewarding to have my creativity and flavor combinations recognized.

Not long after, I rolled into third place for “Soup Wars” with my comforting pumpkin sausage chili! These friendly competitions were a fantastic way to push our boundaries and learn from each other.

Above was my attempt #1 at a pretty soup swirl. #nailedit (sort of!)

Attempt #2 was a little bit better, showcasing the progress made even in small decorative techniques. 😉

Around Thanksgiving, all the culinary students collaborated to prepare a fancy supper club dinner. It was an excellent opportunity to experience high-volume cooking and service, and the best part? Everyone enjoyed some fabulous leftovers afterward! 😉

(Layered brownie dessert parfaits – a sweet culmination of our pastry skills.)

(A refined plate featuring delicate homemade gnocchi, perfectly seared duck breast, and savory mushroom green beans.)
Beyond the Plate: Fruit Carving and Sushi Artistry

We even had a day solely dedicated to the intricate art of fruit carving! I can confidently say I could carve tulip carrots in my sleep now. 😉 It was a fascinating dive into the aesthetic side of culinary presentation.

I won’t lie, I was a little intimidated by sushi day. However, I discovered that making sushi is actually incredibly fun and surprisingly enjoyable! And oh gosh, the results were not just visually appealing but tasted SO good. 😉

(Warm, fluffy homemade dinner rolls – a staple skill every chef must master.)
Looking Ahead: My Culinary Journey Continues
I’ll pause the food bombardment now, though there are tons more amazing dishes we crafted throughout the semester that I simply forgot to photograph, probably because I was too busy indulging! This first semester has been an incredible whirlwind of learning, skill-building, and self-discovery. Each day brought new techniques, new flavors, and new challenges that have solidified my passion for the culinary arts.
Friends, that pretty much sums up my initial four months. My second semester at Blackhawk Technical College begins in less than two weeks, and I’m already buzzing with excitement to get back into the kitchen. I am incredibly grateful for all the support and encouragement you’ve shown me over the past few months. Your cheers and well wishes mean the world to me as I navigate this exciting culinary journey.

Stay tuned for more delicious updates! See you tomorrow with even more food! 😉
